Beef....its whats for dinner!!!

Seriously....it is for dinner! One of my co-worker's husband is a cattle rancher and a cow of his was slaughtered (I know, I try not to think of the cows big brown eyes) a few weeks ago and now it is ready to eat!! We got about 30 lbs of meat for only $3 a pound....that is the best deal ever right?? We will be having steaks, burgers, and roasts for a long time!! We tried the hamburger meat the other night and it was very good!

CSA Weeks 2 & 3

For our 2nd week of vegetables we got many delicious things...broccoli, potatoes, leeks, mixed lettuce, a head of romaine, beets, random greens and turnips.


The third week brought us....broccoli, yellow squash, spring onions, flat leaf parsley, more beets, turnips, garlic, greens, and mixed leaf lettuce.


So many new veggies to try! The other night I made garlic turnip mashed potatoes....They were pretty tasty!! Cant wait to try everything else!

The Appalachia Trail


This past weekend we went hiking with our friends Michelle & Kelly. They have always wanted to hike the Appalachia Trail (in sections) and they decided to start this past weekend with us! We started at the beginning on Springer Mountain and ended at Hightower Gap. It was a 9 mile hike and it took us about five hours. We had a great time and it was very beautiful! I have to say that parts of the hike kicked my but...we still had a great time though! I will definitely need to prepare more for the 2nd part of the trek.... it is 11 miles.



Behind....

I am behind on my blogging....sorry friends! I just started back to school for the summer last week so life will be back to homework every free moment I have :) I promise to post something more interesting soon! (I have a lot to share!!)

Not so good....

I have to say our first creations from our CSA produce was a little disappointing. Eric made a beet salad which had: beets, apple, honey, and apple cider vinegar. I tried cooking greens for the first time. We had 3 kinds of greens (see below posts) and had no idea what to do with them so I cooked them with olive oil, garlic, and crushed red pepper. After having a few bites we tried adding parmesean cheese to the greens....not sure if it helped. Both tasted OK but we are definitely not used to eating this way. Neither one of us grew up on greens or beets so maybe we will have to try it again and see what we think a 2nd time....maybe.

And the winner is....

Right now I know green #1 is Sorrell....and green #2 is Swiss Chard (which is part of the beet family, you were close Katie!)....still no idea what green #3 is. Now the question is....what do I do make with them!?!?

CSA

Community Supported Agriculture is program where people from the community support local farmers by purchasing a share of their crop for a season. You can read up on CSAs on Full Moon Farm's website...Full Moon Farms is who we purchased our CSA from for this summer! We get 10 weeks worth of organic, local veggies for only $15 a week! Here is our first weeks worth of veggies (keep in mind we are splitting a share between our friends the VanDellen's).

First up... mixed salad greens...yum!


We also got some radishes, beats, and leaks...



Now unfortunately nothing is labeled in the box of veggies so I have NO IDEA what the following veggies are....can anyone help me?!?! First person to tell me what all three of the veggies are will win a box of PartyLite Clementine and Clove votives!!!

Strolling along through the....

Cemetery. I think most people think cemeteries are weird and creepy but I think they are very interesting. They are so full of history. Who is the gravestone for? What was their story? Who did they leave behind? Especially in older cemeteries, like this one, the grave stones are very beautiful and ornate. These pictures are from Oconee Hill Cemetery which is right across the street from UGA's Sanford Stadium. What do you think....weird and creepy or beautiful and interesting?

Pictures

If you do not realize by now....I love taking pictures! It is a hobby of mine that I enjoy and it brings me relaxation. So here are two of my favorites from this past weekend...I think they are pretty good so I hope you enjoy them. :)


Mothers Day/Weekend

My parents were here last weekend and it was great to have them here especially because I was able to spend mothers day with my mom!! We had a fun time doing lots of different things! We went strawberry picking, hiking in Unicoi State Park, walking in the botanical gardens, shopping, eating out, and grilling at home. We always love when family (and friends) come to visit us...hint hint!! Here are some pictures from our adventures.


Job update

Ok, so I am not so freaked out now and I have options which are good. Obviously I would love to stay in my current job full-time but since that is not an option I will take what I can get! There are a few positions at the hospital that I could take and I have been applying like mad for positions around Athens. I have a job interview Thursday with a Medical Office so please pray it goes well!

So close....

The new Harry Potter movie is coming out soon! I cant wait!!!

Getting Real

I am just going to come out and day it....this week was shitty! On Wednesday I was told that my position was going to be reduced from full-time to part-time. Not only does that reduce my income by 50% but it also means I have to pay more for my health insurance. So I am pretty stressed out about the whole thing and I am really not sure what to do at this point. My manager has given me options, there are other jobs within the hospital I work for that I could use to supplement....but I love my job and that isn't exactly what I had in mind for my life/career. I am just confused, scared, and pissed off! So right now I am praying that God will work it all out and that I wont be as worried about the situation.

On a good note....My parents are here for a visit! I am super excited to have them here and I know we will have a great time. I will have pictures to post at the end of the weekend on all the fun stuff we are going to do!
