Day 3 in MN

Our 3rd day was spent in Castle Danger, MN right on Lake superior with Eric's Aunt Ada and Uncle Chuck. They have beautiful flowers everywhere so I spent some of the day taking pictures. They also have a following of humming birds, I tried to take some pictures of them too but they are too little and too fast. Chuck estimates that they have 80 or so humming birds that come to the feeders they put out.




After breakfast we went on a 4 mile (or so) hike in the Crosby-Manitou State Park with Chuck and Ada. We hiked to the Manitou river where there were some waterfalls. It was very pretty and relaxing. I think I could have spent the whole day there!




After our hike we had a big lunch at a local diner. Then headed back to the house for a nap and shower. By the time we were all clean and rested it was time for dinner! At this time Eric's Cousin Karen and her husband Ty and son Motts also came to Castle Danger to visit Chuck and Ada. We all ate a wonderful spaghetti dinner and finished off the meal with blueberry dessert (I need to make this with all my blueberries). After dinner Ada was playing a concert in the city band so we went to watch her performance.

After the concert we went straight to bed! After a long day and constant traveling we were exhausted!

Day 2 in MN



The 2nd day of the trip was full of fun things. Eric made me breakfast and then we went into town for some coffee. When we walked into the coffee shop everyone stopped talking and stared us down...Very awkward. You know you are in a small town when..?? After coffee we drove by the paper mill so I could take some pictures of the massive stacks of trees that have been cut down for the mill (sorry this probably isn't too eco friendly). Here is a picture of me by the trees so you know how big these stacks are.


For lunch we took a boat ride to a family friend's cabin. During the boat ride we were being chased by a big black cloud. Luckily we were able to eat lunch inside while it rained but we couldn't go back home until the storm passed. On the way back from lunch Eric, Rachel (Eric's sister), and Blaine (Eric's cousin) had a little fun on the water. Rachel and Blaine wake boarded while Eric skied.


After our water activities we said goodbye to Rachel since she was off to work and we were going to leave for our next destination. Here are the three of us with Rachel's new kittens Joey and Jake.


For dinner we went to the wonderful Sha Sha Resort to eat Nachos and Wings with Eric's Cousin Lars and his wife Tara. After dinner we went on a boat ride with Eric's Uncle Charles, Aunt Kris, Lars, Tara, and Blaine. Sunsets on Rainy Lake are always beautiful....this one was no exception!



After the boat ride we jumped in the car to drive 3 hours to Eric's other Aunt and Uncles house in Castle Danger, MN on Lake Superior (Yeah, that's right...how sweet is that name!?!).

All in all a great day!

Day 1 in MN

Once I flew up to MN I met an old friend, Kristen, for lunch. Lunch was fun catching up on all the things going on in our lives. After lunch she showed me around the new building at Bethel University (my Alma mater).

While touring the new building we ran into more old friends and past co-workers. It was really fun to bump into people I haven't seen in a while. After lunch in the cities I drove 4 1/2 hours to International Falls to meet up with Eric. It was great to see Eric after a week without each other. The best part was being on Rainy Lake. It is so beautiful and relaxing and one of my favorite places to be in MN.

MN Part 1

Eric flew up to Minnesota one week before I did. While he was there he spent time in International Falls (his home town) with his family. He worked on building a new deck for their cabin and went skiing and tubing. I think he had a great time (while I was still in GA taking finals) :)

Catch up!

Hello! We finally have our computer back and luckily we didn't loose anything that was on the computer!!

A lot has happened since I was last able to blog....
1. We got our last box of veggies from the CSA. I am super sad it is over. Cant wait until next summer!!

2. My mom came to visit over the 2nd weekend in July. She was in Atlanta for a PartyLite conference. While she was here we picked two gallons of blueberries! YUM. They are good and we have already used them to make crisp, smoothies, pancakes, and as toppings on ice cream and yogurt.


3. We also went on vacation to MN to see family and friends. I took about 500 pictures so I have a lot to blog about! :) Stay tuned...

Computer Update....

Looks like something with the software is bad....it is being fixed as we speak! I will hopefully be up and Blogging by the beginning of August!
