Pickeling
A few days ago I tried pickling the cucumbers we received from our CSA. The process was pretty easy. I used a recipe from cooks.com and this is what it all looked like....
I have no idea if they have turned out....we are planning on trying them tonight with some hamburgers. I will let you know!

CSA Week 6
We are getting closer to the end of our CSA journey. I have to say it has been a pleasant experience and I would love to do it again next year! This week we got more cucumbers (I am going to try pickling this week), garlic, onions, golden beets, cabbage, turnips, cilantro, lettuce, squash, and green beans (YUM, they were so good last week!).

Savannah
Our friends Mike & LeAnne got married this past weekend in Savannah. We drove down very early Saturday morning with friends Michelle and Kelly. We spent the afternoon at the beach and then went to our hotel to clean up for the wedding. LeAnne was beautiful and everything looked so nice! The reception hall was a cool looking place so we decided to have a little photo shoot outside. On Sunday we had an amazing breakfast at Heuy's and walked around downtown Savannah until we were too hot to go on and wanted to head back home. Here are some pictures from our weekend....

CSA Week 5
Well here are our veggies from last week (sorry it is a week late). We got: cucumbers, onions, garlic, dino kale, cabbage, green beans, zucchini, squash, and basil! We made a sort of stir-fry with the basil, garlic, onions, zucchini and green beans. We paired this with some steak and rice. It was all very yummy!
We used the cabbage to make an Asian Slaw Salad and still need to use the squash and the rest of the basil. I plan to pickle my cucumbers but I feel like I might need some more to do that.
Tomorrow we get a new box. I am really hoping for some tomatoes!!

Altamaha River
This past weekend we went canoeing down the Altamaha River in South East Georgia with our friends Michelle & Kelly. We paddled a little more than 40 miles from Towns Bluff to Carters Bight Landings. We had a great time and a little too much sun! I am not going to lie and say the experience was easy (my arms are still sore!) but we saw a lot of beautiful places and swimming in the river was a lot of fun (and felt great in the hot sun!).
PS: I am sorry that the picture quality is not so good...I brought a disposible camera since the camera fiasco of 2008. Michelle and Kelly also have pictures from our trip so check out their blog as well!

CSA Week 4
This weeks harvest brought us: rainbow chard, flat leaf parsley, red and white beets, turnips, cucumber, cabbage, yellow squash, romaine lettuce, onions and garlic! This week we have been better about using all or veggies and we only got them yesterday!! So far we have made coleslaw with the cabbage and Eric made a very good casserole with the rainbow chard, onions, garlic, and parsley.

Kicking my bootay!!!!
This semester at Piedmont is kicking my bootay! I am taking two classes: Organizational Behavior (OB) and Management Information Systems (MIS).
For the first three classes in OB we were supposed to read nine chapters (NINE!!!) from our book. I have read 3 and the mid term is next week...CRAP.
In MIS, we have about 5 assignments every week to complete. I am SOOOO behind it isn't even funny. Some how I need to get on track and get ahead.... Gotta love working full-time and going to school full-time. I think I am crazy for doing this!!!
